How to prepare pumpkin honey:
For the preparation of this type of honey you will need one ripe yellow pumpkin.
All you need to do is to cut the top and remove the inside (seeds and fibers).
In that hole you need to pour sugar up to the top (chose sugar according to your preferences).
Cover the hole with the top you previously cut and store it on a cold and dark place for ten days.
The best is to put the pumpkin on a larger place because with time it will soften and it will be very hard to move it around.
With time, the sugar will dissolve in the pumpkin juice. When the sugar dissolves, remove the cover and store the liquid from inside in a glass jar.
If you notice mold on the top of the pumpkin it is OK and in that case make a hole at the bottom of the pumpkin and take the honey from there.
Storing pumpkin honey
The best is to store the honey is a fridge in a clean glass jar with cover. The expiration date is within a month.
In order to preserve it longer, you may boil it until it becomes very thick but in that case it will lose some of its healing properties.
How you will consume this honey is up to you. You may add it to your tea, consume 2 – 3 tablespoons several times a day, you may eat it with pancakes or invent your own way it all depends to your imagination. Consume it for as long as you want. If you feel that you won’t have enough you may prepare greater amount from several pumpkins.
If in some case you can’t (or you don’t like) to consume honey made from sugar then you can fill in the pumpkin with real bee honey.
